The secret to making fantastic frozen chocolate dipped strawberries is a good quality couverture chocolate and ripe, but firm strawberries. Only 3 ingredients needed to make these copycat TruFru frozen chocolate covered strawberries!

We are big fans of Trufru frozen fruit, however they can be a bit pricey. So I set out to make my own, more affordable version at home.
After doing a little research, it turns out the key to delicious frozen chocolate strawberries is using Couverture chocolate. This type of chocolate is perfect for dipping and freezing, and produces a nice crisp ‘snap’ when bitten into.
The result? Perfectly sweet DIY chocolate dipped strawberries. The fruit has a beautiful glossy coating with chocolate that is easy to bite into!

Ingredients for frozen chocolate strawberries
- 1 pound ripe but firm strawberries. If on the larger size, cut in half to produce bite size pieces. A pound of strawberries will yield about 24 strawberries, or up to 48 strawberry halves if on the larger size.
- 1.25 cups high quality dark couverture chocolate. The brand I use is called Callebaut and has thousands of excellent reviews online. It has a slight bitter taste typical with dark chocolates, but is still plenty sweet. Keep in mind that it is primarily available in large bags, but has an 18-24 month shelf life. So you’ll have plenty of chocolate on hand to make multiple batches!
- ½ cup plain Greek yogurt, if you wish to give some of your strawberries a yogurt coating first. Preferably use low-fat or full fat, and add a bit of sweetener to taste.
- Flaky sea salt to sprinkle on top of the frozen chocolate strawberries.
What is Couverture Chocolate and why is it important?
To be considered couverture, the chocolate must contain at least 31% cocoa butter, which can range up to 39%. This high fat content is what gives couverture its unique properties.
Because of its high cocoa butter content, the chocolate has superior fluidity, a glossy sheen, and a firm snap when tempered. It also melts quicker than standard baking chocolate. These qualities make it a favorite among pastry chefs and chocolatiers
How to make chocolate dipped strawberries
Prep Berries & Coat in Yogurt
Prep the strawberries by giving them a good rinse and then lay out to dry. If strawberries are large, cut them in half or quarters, so you have bite sized pieces. If making a batch of yogurt dipped strawberries, start with coating the prepped strawberries in lightly sweetened yogurt. Set on a parchment lined baking try and freeze for at least 60 minutes.
Melt Chocolate
When ready to dip berries, in chocolate, add it to the bowl of a double boiler, and melt over low gentle heat. Read this tutorial to create your own double boiler.
Gently coat strawberries
When the chocolate is melted completely, begin dipping each strawberry piece in chocolate, using a spoon or fork. Coat well and then place on a parchment lined baking tray while you work through dipping all strawberries.
Best method for yogurt berries
For the yogurt dipped strawberries, we found the best method to be to dollop melted chocolate over the strawberry pieces and spreading chocolate on the berries till smooth. Dipping the frozen strawberries directly into the melted chocolate will lead to the chocolate seizing up a bit and losing its smooth consistency.
If desired, sprinkle chocolate dipped strawberries with a bit of flaky sea salt. When all strawberry pieces are coated, pop in the freezer for at least 60-90 minutes.
When your DIY chocolate dipped strawberries are frozen through, remove from the freezer and transfer to an airtight container for storing. Enjoy a couple of pieces any time you want a little sweet treat that feels really indulgent.
Proper Storage of Strawberries
Don’t make the same mistake I’ve made, and leave your frozen chocolate covered strawberries on the sheet pan, uncovered on the freezer! Set your self a timer to transfer them to a airtight container.
Either use a glass lidded container or a plastic/silicone freezer bag. This will prevent freezer burn. Strawberries can be stored in the freezer for up to 3 months, but good luck with them lasting that long!

Equipment
- Double boiler or make your own with a small sauce pan and glass bowl that fits on top
Ingredients
- 1 lb Strawberries
- 230 grams Dark Couverture chocolate or 1.25 cups
- ½ cup Greek yogurt full fat or low-fat, optional
- 1 teaspoon Maple syrup optional
- Flaky sea salt

- If making a batch of yogurt dipped, chocolate covered strawberries, start with coating the rinsed and dried strawberries in yogurt. In a small bowl, scoop out the Greek yogurt, and if desired, mix in a bit of sweetener. Carefully coat each strawberry piece in yogurt and set on a parchment lined baking try. Freeze for at least 60 minutes.½ cup Greek yogurt, 1 teaspoon Maple syrup
- Using a double boiler, gently melt the chocolate over medium low heat, stirring with a plastic spatula or wooden spoon, until all chocolate is completely melted.230 grams Dark Couverture chocolate
- For plain chocolate dipped strawberries, using a fork or spoon, dip each strawberry piece in melted chocolate until well coated. Set aside on a parchment lined baking sheet.
- For the yogurt dipped strawberries, we found the best method to be to dollop melted chocolate over the strawberry pieces and spreading chocolate around on surface till smooth. Dipping the frozen strawberries directly into the melted chocolate will lead to the chocolate seizing up a bit and losing its smooth consistency.

- When frozen through, remove from the freezer and transfer to an airtight container for storing.
- When ready to eat, pop a few pieces out of the bag and enjoy! If pieces are on the larger side, it helps to let them sit out for a few minutes to thaw a bit.
