Ingredients
The main component of these wraps is my Greek Yogurt marinated chicken thighs (feel free to use breasts), along with the accompanying garlicky Greek yogurt sauce. Feel free to save and print up those other 2 recipes directly, or just follow instructions below.
- 2 pounds boneless, skinless chicken thighs, preferably air-chilled.
- ¾ cup plain Greek yogurt, low-fat or nonfat preferred.
- ¾ cup mayonnaise, preferably a light or olive oil based brand. Using one of these options will help reduce the calories and saturated fat just a bit.
- 4 large garlic cloves, peeled and minced.
- Zest and juice from 1 lemon, which will end up being about 2 teaspoons and 2 tablespoons respectively.
- 2 tablespoons fresh herbs, minced (optional). I used a blend of fresh oregano and Italian parsley, but other great options would be thyme, dill, cilantro or mint.
- 1-2 teaspoons kosher salt, adjusted to taste.
Garnishes for assembling wraps
- Whole wheat pita bread – Whole wheat flour retains the bran and germ of the wheat kernel, providing a bit more fiber, protein and essential vitamins and minerals. Bonus is we can’t even tell the difference in taste or texture between standard pita and whole wheat, so may as well get those extra nutrients!
- Sliced vegetables including red onions or radishes, tomatoes, cucumbers and some lettuce.
- Garlic yogurt sauce – good news is this recipe has the same sauce and marinade in one, so no need to make a separate sauce!

Start by making the chicken marinade by combining all ingredients, except the fresh herbs, into a medium mixing bowl, then mix well.
Greek yogurt drizzling sauce instructions
Before stirring in the fresh herbs, spoon out about ½ cup of the lemony garlic marinade. Set aside in a small bowl and refrigerate until ready to use.
Once you’ve stirred in the fresh herbs, add the chicken thighs or breasts, and mix till well coated Cover and refrigerate for at least 2 hours, or up to 12 hours.
When ready to cook the chicken, remove each piece from the marinade and wipe off excess sauce. For best results, cook on an indoor or outdoor grill, at medium high heat, for about 7-8 minutes per side. If you wish to bake the chicken, line a baking sheet with aluminum foil or parchment paper. Bake at 375 degrees f for 20-25 minutes, till cooked through.
Assembling chicken wraps
Allow the Mediterranean chicken to rest for about 5-7 minutes before cutting into bite size pieces. Place in a serving platter along with all the garnishes, and allow everyone to assemble their own wraps according to their tastes and preferences. A couple of pita building tips to keep in mind!
- Assemble in layers, with sturdier spreads like hummus going on first, then adding the lettuce before adding chicken. Finish with bite size/sliced vegetables and drizzle on sauce last.
- Distribute your fillings evenly, but place ingredients towards the middle, leaving space at the ends to aid in rolling and avoid stuff falling out all over the place.
- Portion control: Fill generously but avoid overstuffing, which can make the pita difficult to handle and prone to tearing.
Make sure to have extra lemon wedges on hand, salt and fresh cracked black pepper, and additional sauces like hummus or fire feta.
Meal Prep Tip!
If you plan to make these wraps for meal prep, it’s very important to not assemble until ready to eat. To make for a quick grab and go option, portion out chicken and veggie garnishes in individual containers. You can even wrap individual portions of pita bread in parchment paper to make for even quicker work.
Then, when ready to assemble, unwrap pita bread and layer in ingredients. By assembling pita wraps too far in advance, they will become soggy and fall apart.
