<p>Measure and mix your dry ingredients in a medium bowl and your wet ingredients in a larger bowl. (You’ll be adding the dry to the wet.)</p>



<h3 class="wp-block-heading">Dry Ingredients</h3>



<ul class="wp-block-list">
<li>1 ¼ cups oat flour &#8211; you can purchase out flour at most markets, or easily make your own at home using oatmeal and a high speed blender or food processor. Make sure to see my oat flour tip below, if using a food processor! </li>



<li>¼ cup almond flour &#8211; I chose to add a bit of almond flour to avoid any dryness issues, improve texture (almond flour gives a more balanced crumb) and structure (oat flour lacks gluten so almond flour helps hold the cookie batter together).</li>



<li>1 tablespoon ground flaxseed &#8211; also called flax meal, helps control cookie spread and gives a small nutrition boost via a bit of extra fiber. </li>



<li>½ teaspoon baking soda</li>



<li>½ teaspoon sea salt</li>
</ul>



<h3 class="wp-block-heading">Wet ingredients</h3>



<ul class="wp-block-list">
<li>⅓ cup olive oil &#8211; Make sure to use a mild cooking olive oil, not a drizzle olive oil that can be too peppery or overpowering. </li>



<li>½ cup brown sugar &#8211; using a combo of brown sugar and granulated sugar is standard in chocolate chip cookies, but  while most recipes use equal parts, I used more brown sugar in the recipe to help prevent cookie spread and to hold onto more moisture.  </li>



<li>2 tablespoon granulated sugar</li>



<li>1 egg + 1 yolk &#8211; we add an extra yolk to add a richer flavor to the cookie, since we skip the butter used in traditional chocolate chip cookies. The extra yolk also helps give the cookies a chewy center, tender crumb and enough structure to hold together.</li>



<li>2 teaspoon vanilla</li>



<li>¾ cup dark chocolate chips or chunks</li>
</ul>

<p>If making your own oat flour using a food processor, it will likely need to be sifted for a lighter, finer texture. Either pass processed flour through a fine mesh strainer, or a flour sifter.</p>

<p>The important next step is to let the cookie dough rest on the counter for about 10 minutes, and then refrigerate for at least 30 minutes! This helps the oat flour absorb the liquid and the dough to firm up, resulting in less cookie spread.</p>

<p>Once dough is chilled, form a high dollop of dough, about 30-35 grams each, on a parchment lined baking tray, making sure to leave at least 2 inches between the cookie dough to allow for spread. Bake for 14 minutes. </p>



<p>Remove from the oven and immediately sprinkle with flaky salt if desired. Allow to set for 5 minutes, then remove to a wire rack and allow to cool completely before storing. </p>

<h2 id="recipe-substitutions-alterations"   class="wp-block-heading" >Recipe Substitutions &amp; Alterations</h2>



<ul class="wp-block-list">
<li>Use dairy free chips and a vegan egg replacer or “flax egg” in the wet ingredients for a vegan version. To make the equivalent of one flax egg, add 1 tablespoon flax meal and 3 tablespoons of water to a small bowl and mix with a fork until fully combined. Set aside for 5 minutes to allow the flax egg to thicken before using it.</li>



<li>Use either milk chocolate or dark chocolate chips, however the cookies will have a slightly higher sugar content than noted in the nutrition facts, if using milk chocolate. </li>



<li>Substitute canola oil for olive oil for a similar nutrition profile and taste and texture.</li>
</ul>

<li>1 pound top sirloin or beef chuck roast, cut into bite-sized  ½-inch cubes</li>



<li>½ cup yellow onion, diced (~ ½ medium sized onion)</li>



<li>1 cup carrots, sliced (~ 2 medium carrots peeled and sliced into ½&#8243; coins )</li>



<li>1 cup celery, sliced (~ 2-3 stalks of celery cut into 1&#8243; slices)</li>



<li>3 cloves garlic, minced</li>



<li>1 can (15 ounces) diced tomatoes. May use Italian herbed, low sodium or even tomatoes with peppers. Make sure not to drain.</li>



<li>1 can (15 ounces) dark red kidney beans, drained and rinsed. Feel free to swap out to another bean you have on hand or prefer. </li>



<li>7 cups beef broth (use 6 cups for a thicker, stew-like consistency, and you may need to add another cup of broth when reheating)</li>



<li>1 teaspoon salt, plus more to taste</li>



<li>Dried seasonings including 1 teaspoon dried basil, 1 teaspoon dried thyme and 1 dried bay leaf</li>



<li>1 cup ditalini or small shell pasta</li>



<li>1 cup zucchini, quartered and sliced (~1 medium)</li>

<p>Season the beef with a generous pinch of salt and pepper, and toss. Heat 1 tablespoon of neutral oil like canola or olive oil in a large Dutch oven or stainless pan over medium high heat. <p>Italian Olive Oil Cake is a simple, rustic-style cake that comes from southern regions of Italy where olive oil is more traditionally used than butter as the primary fat in baking.&nbsp;</p>



<p>The ingredient list for Italian olive oil cake is typically straightforward as far as cakes go, but unlike heavily frosted layer cakes, this cake is simply decorated. It is commonly finished with a dusting of powdered sugar, chopped nuts, or a light citrus or liqueur glaze.&nbsp;</p>



<p>The focus of an olive oil cake is on flavor and texture rather than decoration. The best olive oil cakes use a quality, flavorful extra virgin olive oil, giving the cake its signature moist crumb and subtly fruity somewhat peppery flavor.</p>

<p>I’ve split the ingredients into three sections. I suggest making the topping while the cake is baking.&nbsp;</p>



<h3 class="wp-block-heading">Dry Ingredients</h3>

<li>1 ¾ cup sugar</li>



<li>1.5 teaspoon fresh rosemary &#8211; finely chopped</li>

<li>1.5 teaspoon kosher salt</li>

<h3 class="wp-block-heading">Wet Ingredients</h3>

<li>1.5 teaspoon each orange and lemon zest &#8211; freshly grated</li>



<li>3 large eggs</li>



<li>2 tablespoon orange juice</li>



<li>2 tablespoon lemon juice</li>



<li>¼ cup orange liqueur&nbsp;</li>



<li>1.5 teaspoon vanilla extract</li>



<li>⅔ cup each olive oil and vegetable oil &#8211; Make sure you use a good tasting, quality olive oil. After all, it is the star of the show.</li>



<li>1 ¼ cup whole milk&nbsp;</li>

<p>These recipe amounts will make more topping than needed, but save in an airtight container for up to 3 months in the fridge. This delicious mixture can be used on other baked goods, as an ice cream topping, mixed fresh fruit and yogurt, etc.</p>

<li><strong>Step 3: </strong>Add the dry  ingredients to the wet, and mix till all ingredients are well combined and incorporated. Some small lumps are fine, but all large lumps should be mixed in thoroughly. </li>

<li><strong>Step 4:</strong> On a foil lined baking sheet, place the prepared baking pan that has been well greased with cooking spray. Pour the batter in the pan and to catch any drips that may seep out of the pan, wrap the tinfoil around the base of the pan. Bake in the 350 degree preheated oven for 55-75 minutes. </li>

<h2 id="is-olive-oil-cake-healthy"   class="wp-block-heading" >Is Olive Oil Cake &#8220;Healthy&#8221;?</h2>



<p>All foods in moderation can fit into a healthy diet. So while olive oil cakes aren’t necessarily &#8220;healthy&#8221;, after all it is still cake, it does have a slight edge over butter-based cake batters. Olive oil based cakes are <a href="https://www.health.harvard.edu/blog/less-butter-more-plant-oils-longer-life-202504233096">lower in saturated fats</a>, averaging about 3 grams per slice, whereas butter batter cakes have 9+ grams of saturated fat. </p>



<p>And olive oil also has the added benefits of monounsaturated fats as well as important antioxidants and polyphenols. Calories will be comparable though. So as far as cakes go… I’m comfortable with “it’s better than butter.”</p>

<h2 id="recipe-subs-and-variations"   class="wp-block-heading" >Recipe Subs and Variations</h2>



<ul class="wp-block-list">
<li>You can use all olive oil instead of the canola/olive oil mixture suggested in the recipe card.</li>



<li>Feel free to experiment with different types of citrus. Cara Cara or Blood Oranges are a great option when in season. Grapefruit and lemon offer a slightly more bitter flavor that balances well with the sweet and savory profile of the cake. You can also experiment with almond extract, or even a splash of liqueur.</li>



<li>Try out different herbs in place of rosemary. Herbs de Provence or thyme, especially lemon thyme,&nbsp; are great savory subs. You can also try lemon balm, orange or lemon mint, or lavender.</li>



<li>If you want to skip the nutty sugar topping, sprinkle the cake with a simple dusting of powdered sugar.</li>
</ul>

<h2 id="tips-tricks"   class="wp-block-heading">Tips &amp; Tricks</h2>

<li>Rosemary leaves should be stripped from the stem before chopping.</li>



<li>Make sure to place aluminum foil on the sheet pan and then wrap the foil around the bottom of the pan to prevent spillage.</li>



<li>Use a high-walled cake pan if you don’t have a springform pan</li>



<li>Oven temperatures vary greatly, so cooking time can vary quite a bit depending on your stove. Bake time can take anywhere from 55 minutes to 1 hour 15 minutes. Make sure to test regularly and don’t worry if your cake takes longer (my convection counter oven bakes much quicker than my standard oven for example).</li>

<p>This cake can be stored on the counter under a cake dome in cool temperatures, but I definitely suggest you refrigerate it in warmer temperatures. Cake can be stored for up to a week if kept cool and in an airtight container.</p>



<p id="h-">Cake can be frozen for up to 3 months. Tightly wrap in plastic wrap and foil, or in a freezer bag, and thaw at room temperature. If freezing, skip the sugar almond topping.<br><br>Leftover nut topping can be refrigerated in an airtight container for up to 3 months. Use in ice cream, yogurt, or fresh fruit.</p>
