Cook the onions and garlic until fragrant. Then add in the vegetables and seasonings and cook until slightly softened.
Add in the tomatoes, tomato paste, and vegetable broth and simmer. Then add in the vegetarian beef.
Once the beef is cooked through, serve and enjoy with your favorite sides and garnishing!
