This loaded hummus dip recipe is a quick and easy appetizer to bring the wow factor to a party. With roasted eggplant, feta cheese, and roasted red peppers this hummus dip is sure to please!
Peel the eggplant and cut it into cubes. Salt and set aside until ready. Then roast until fork tender.
Cut and prep the cherry tomatoes. Roast until softened.
Spread out the hummus on a large serving plate. Then layer on all of the ingredients.
Drizzle with olive oil, then serve with warm pita bread, chips or veggies and enjoy!
