In season during Fall and Winter, it looks like a butternut squash but is much smaller and sweeter. No bitterness and cooks up quickly and easily

Ingredients

2 honeynut squash 1-2 tbsp olive oil A few sprigs of fresh thyme salt & pepper  a sprinkling of goat cheese & chopped pistachios

Begin by washing off your honeynut squash and slicing it in half lengthwise. If it's tough to cut into, microwave for 1-2 minutes. Then scoop out the seeds.

Brush each piece with olive oil and sprinkle with salt and pepper.

Place on a parchment lined baking sheet and roast at 400 degrees for about 20 minutes, until fork tender. You can roast them face side up or down.

Sprinkle with a soft tangy cheese, like goat cheese, and top with chopped nuts. I recommend nuts, but pecans or pine nuts would be great too!
