Air Fryer Chicken Cutlets

2 chicken breasts, fileted into cutlets 1 egg whisked with a splash of water 1.5 cups Panko bread crumbs (or favorite GF substitute) 1/2 cup AP flour Multi-Purpose Herb & spice mix: 2 tsp paprika 1 tsp ground pepper  1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground mustard 1/4 tsp basil 1/4  tsp thyme 1/8tsp cayenne

Step 1 - slice a boneless chicken breast in half to make 2 tenders

Step 2 - gently pound chicken tenders so they are somewhat even in thickness

Step 3 - dredge a tender in flour then dip in the egg wash

Step 4 - dip a tender in the breadcrumb & herb blend mixture, coating thoroughly

Step 5 - place chicken on the air fryer basket and lightly coat each tender with oil

Step 6 - halfway through air frying, flip tenders, lightly spray & it's a good idea to check internal temp to help determine how much longer they need to cook for

Cooking times will vary depending on air fryer type and model, but average is 8-12 minutes in a 400 degree air fryer
