An easy and healthy appetizer that's refreshing and delicious, with the sweetness of watermelon, crunch of cucumber, and briny tang of feta, the sprinkle of Tajin on top makes for a flavorful taste explosion!
8ouncesFeta cheesereduced fat block, cut into 16 1" cubes
2Mini cucumberscut into 32 thin slices
500gramsWatermeloncut into 32 1" cubes, about ¼ of a large watermelon
16-32Mint leavescut in half if very large

Instructions
Begin by prepping the watermelon by slicing off the rind and cutting into 32 1" cubes that each weigh about 16 grams. Then slice the cucumbers into 32 very thin slices.
500 grams Watermelon, 2 Mini cucumbers
Prep the feta cheese by cutting the block in half lengthwise, and then carefully cutting into 16 1" cubes. Make sure the cheese isn't frigidly cold, as it may not slice cleanly and may fall apart a bit.
8 ounces Feta cheese
Begin assembling each watermelon feta skewer by placing a mint leaf on the end, then adding a cube of watermelon, a slice of cucumber, and very carefully skewer the block of feta cheese. Slide on one more cucumber slice, one more watermelon cube and finish with a mint leaf. Set on a serving platter. Note that if you have a very large mint leaf, cut it in half and then fold it down so it fits neatly on the watermelon appetizer.

Once all 16 skewers are assembled, and right before serving, sprinkle with Tajin. Make sure to do this right before serving, as the salt from the Tajin will make the watermelon and feta "sweat" a bit and the appetizer could become too watery. Leave out a small dish of tajin for people at add more if they wish.
