A Mediterranean twist on classic cowboy caviar, our version has cannellini and garbanzo beans, as well as a oregano lemon vinaigrette. Packed with legumes and tons of fresh veggies, it’s a versatile and affordable classic dish that still supports your nutrition goals.
Mix the vinaigrette ingredients together and vigorously whisk till well combined.
¼ cup Lemon juice, ¼ cup Olive oil, ½ teaspoon Kosher salt, ¼ teaspoon Black pepper, ½ teaspoon Dried oregano, ⅛ teaspoon Red pepper flakes
Pour the dressing all over the veggie and bean mix, and toss together till well combined and all ingredients are well coated with the dressing. Taste, and season with additional salt and pepper if needed. Top with the crumbled feta and serve.
