This chicken tortellini soup is a wonderful easy dinner that's ready in less than 20 minutes. Filled with warm cheesy tortellini and the convenience of store bought rotisserie chicken, it's a deliciously comforting meal for any night of the week.
4cupschicken stockadd in 1 additional cup of stock or water if need more liquid
2tablespoonpestostore bought or fresh
Instructions
In a large pot or dutch oven, heat 2 tablespoons of olive oil on medium heat. Sauté diced onions for 2-3 minutes till translucent, then add carrots or other fresh veggie, and sauté for another 5 minutes, stirring frequently.
Raise stove to medium-high heat, stir in chicken stock and bring to a gentle boil. Then add in the cheese tortellini and cook according to package directions, just till al dente.
Lower heat to medium low, and stir in chicken, pesto and season with salt and black pepper. Cook till chicken is just heated through.
Top your chicken tortellini soup with parmesan cheese sprinkles, red pepper flakes and serve with crusty bread.

To use raw chicken instead of pre-cooked chicken, add two chicken breasts or thighs to the boiling broth and cook through, then shred and set aside. Cook the tortellini as directed, then add the shredded chicken back in.
