Apple Chicken Sausage Recipe with Orzo and Broccolini

A quick and delicious one pan meal with chicken sausages, orzo pasta and crisp broccolini

Ingredients

  • 1 tablespoon olive oil
  • ½ cup onion diced
  • 12 ounces Apple chicken sausage sliced into 1" rounds
  • 1 cup orzo pasta
  • 2 garlic cloves minced
  • 2 cups chicken broth use 2.25 - 2.5 cups if using whole wheat orzo
  • ½ teaspoon red pepper flakes
  • 8 ounces broccolini 1 bunch, cut into thin pieces
  • 1 teaspoon lemon zest ½ lemon
  • ¼ cup grated parmesan cheese
  • salt and pepper to taste

Instructions

  • Heat 1 tablespoon olive oil in a large skillet (with a lid) over medium high heat, and add the diced onion, sautéing for 3-5 minutes until onions are slightly translucent. Add sausage and sauté till sausage pieces are lightly browned, about 5-7 minutes.

  • Add the orzo and garlic, and cook for another minute or two on medium heat, stirring well.

  • Stir in the broth, a generous pinch of salt and pepper, and crushed red pepper. Bring to a gentle simmer, cover and cook on low for for about 6-8 minutes till orzo is al dente but still liquidy.
    2 cups chicken broth, ½ teaspoon red pepper flakes, salt and pepper to taste
  • Add in the broccolini and recover the pan, cooking till liquid is absorbed and broccolini is tender but not overcooked, about 5-10 minutes more.
    8 ounces broccolini
  • Stir in the parmesan cheese and lemon zest, and adjust salt and red pepper flakes to your personal preference. Serve immediately.

Notes

If using whole wheat orzo, add additional liquid and cook for a few extra minutes.
