Breaded Cod Fish Tacos

These baked fish tacos come together in just 30 minutes, making them a perfect healthier weeknight dinner option!

Ingredients

  • 1 lb fresh or frozen cod , cut into 1 to 2-inch pieces
  • 1 cup panko bread crumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • dash of chili powder or cayenne
  • 1 egg , lightly beaten

For assembling:

  • corn tortillas
  • cabbage
  • salsa
  • lime
  • queso fresca
  • guacamole
  • cilantro

Instructions

  • Preheat oven to 425 degrees F.
  • If using frozen cod, thaw out completely and cut up into 1"-2" pieces, trying to keep them as uniform as possible.
  • Lightly beat 1 egg.
  • Combine panko bread crumbs with spices.
  • Dip each piece of fish in the beaten egg, then dredge in the breadcrumb mixture.
  • Place on a foil-lined baking sheet.
  • Bake at 425 degrees F for 15 minutes.
  • Serve with corn tortillas and desired toppings.
