This roasted sweet potato bowl is hearty vegetarian dinner. The roasted sweet potatoes are tossed with cauliflower rice, black beans, and topped with cashew cream. This sweet potato bowl recipe is an easy dinner that’s ready in 30 minutes!
Line a baking sheet with parchment paper and spread out the sweet potatoes. Roast until tender.
Chop up and put the cauliflower in a food processor. Then pulse until finely chopped.
Cook the onions with the seasoning and black beans until fragrant. Then add in the cauliflower rice.
Add in the sweet potato and sprinkle on lime juice. Then mix together and serve and enjoy!
