This delicious carnitas bowl is slow braised and mixed with roasted sweet potatoes, peppers, onions, and black beans. A well balanced, filling meal for any day of the week!
In a bowl, toss together the diced sweet potatoes, olive oil and seasonings. Roast in the oven until fork tender.
On a separate baking sheet, evenly spread out sliced bell peppers and onions and roast in the oven.
Warm the beans, then layer in a bowl with beans, sweet potatoes, vegetables, carnitas and garnishes. Then serve and enjoy!
