Mix together the flour and S+P. Then evenly coat each pork medallion and set aside.
Heat up a skillet with olive oil and then cook each pork medallion until each side is browned. Set aside once cooked.
Add the remaining ingredients to the pan and cook until the potatoes are fork tender.
Return the pork to the pan and add in the mustard and butter. Cook together and then serve immediately.
