Baked Salmon & Veggies

Gather Ingredients

Salmon fillets Chopped veggies of choice Jarred mushrooms/olives Olive oil, salt & pepper

Prep the salmon

Place fillet on a piece of parchment paper, brush with olive oil and then top with veggies tossed in olive oil, salt & pepper

Place your fish in the center of the parchment paper and begin rolling on one side, continuing to roll as you go around the fish, creating a half moon

The steam generated from the packets will help the salmon & veggies cook quickly, so bake at a higher temp for a short period of time.

The parchment packet will puff up fully when salmon is baked through, after about 8-10 minutes. The fish should flake off easily with a fork.
