Nutty Baked Granola

Ingredients

  • 3 cups rolled oats or quinoa flakes if sensitive to oats
  • 1 cup raw cashews
  • ½ cup raw pepitas
  • 1 cup unsweetened shredded coconut
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ cup maple syrup
  • cup olive oil
  • 2 teaspoon vanilla extract
  • sea salt

Instructions

  • Preheat oven to 250 degrees and line a baking sheet with parchment paper
  • Mix all dry ingredients in a large mixing bowl
  • Whisk olive oil, maple syrup and vanilla in a separate bowl
  • Combine the olive oil mixture with the dry ingredients and stir to combine
  • Spread onto the baking sheet, pressing down so that the granola sticks together
  • Bake for 60 to 75 minutes
  • Allow to cool, and break granola into small and large chunks.
