White Fish, Corn, Sausage and Potatoes Sheet Pan Dinner

This sheet pan dinner is so delicious and healthy! A full meal in one, featuring flaky white fish, hearty sausage, corn and potatoes, it's a truly simple and satisfying meal. This recipe was adapted for an easier cook method, from an America's Test Kitchen recipe.

Ingredients

  • 3 tablespoon olive oil divided
  • salt and pepper to season
  • 4 6-ounce white fish filet halibut or cod are recommended
  • 1 lb small red potatoes
  • 4 ears of corn cut in half
  • 12 ozs andouille sausage sliced into large pieces
  • 2 teaspoon Old Bay seasoning
  • 4 tablespoon unsalted butter melted

Instructions

  • Preheat the oven to 500 degrees and place the corn and potatoes on the baking sheet.
  • Toss the potatoes and corn with 2 tablespoon of olive oil, salt and pepper, and bake for 20 minutes.
  • Remove the corn from the tray and set aside in a bowl.
  • Lower oven to 400 degrees.
  • Add the fish and sausage to the tray, alongside the potatoes, and brush the remaining 1 Tbsp. oil on the sausage. Sprinkle with salt and pepper.
  • Bake for another 10 minutes, until fish easily flakes with a fork and is 130 degrees internal temperature. While baking, melt the butter and stir in the Old Bay seasoning.
  • Remove tray from the oven, and add potatoes to the bowl with the corn.
  • Pour half of the butter mixture over the potatoes and corn, and toss to coat thoroughly. Brush the remaining butter mixture over the fish filets.
  • Place all ingredients on a serving tray and sprinkle with fresh chopped parsley. Serve immediately.

Notes

  • Don't Overcrowd The Sheet Pan. Make sure everything you are baking has enough room so everything can bake evenly and get crispy. 
  • Make It Your Own. If you have small white potatoes then use those. If you have smoked sausage, and not andouille then use that. Want to add a little red pepper for kick? Then do so! By all means adjust where needed!
  • Coat In Oil. You want to make sure to brush the veggies with oil so they don't stick.
