Ingredients

  • 3 cups cottage cheese
  • 6 pieces Whole wheat bread toasted

Savory Toast Ingredients

  • 1 Hardboiled egg
  • ½ Avocado medium size, sliced
  • ½ Tomato thinly sliced
  • 2 Radishes thinly sliced
  • ¼ English cucumber thinly sliced
  • 1 teaspoon Nutritional yeast
  • 1 teaspoon Lemon pepper seasoning
  • ¼ tsp Capers
  • micro greens and fresh dill

Sweet Toast Ingredients

  • 1 tablespoon Fresh jam
  • 1 teaspoon Slivered almonds
  • orange zest
  • ¼ cup Fresh berries
  • 1 teaspoon Chia seeds
  • 1 teaspoon Honey
  • ¼ Banana sliced
  • 1 tablespoon Nut butter
  • 1 tablespoon Sweet cacao nibs
  • 1 teaspoon Shredded coconut

Instructions

  • Toast each slice of bread and top with ¼-1/2 cup of cottage cheese
  • Assemble each toast with various toppings of choice, using examples above as starting point.
  • Serve immediately and enjoy!

Notes

Cottage cheese can be watery and/or runny depending on the brand you purchase. If your cheese is a bit too wet, strain out excess liquid using a fine mesh strainer or a piece of cheese cloth. This will ensure your toast doesn’t get prematurely soggy.
To make smooth cottage cheese, simply add desired amount of cottage cheese to a food processor or blender, and whip till creamy and smooth.
