In a small bowl, combine the oil and seasonings into a paste. Then evenly brush that paste onto each thigh.
Roast the chicken thighs with lemons and garlic on the prepped baking sheet.
Prep the veggies and toss in olive oil and salt and pepper. Then add to the sheet pan with the chicken and bake until the chicken is cooked through.
