This healthy and tasty dish is great for a special weeknight meal and is gluten, dairy and grain free, making it both Whole 30 and Paleo friendly.
Slice your zucchinis and place them on the baking sheet. Brush them with olive oil and then bake for a few minutes.
Layer your ingredients on the zucchini slices and then roll them up. Place in the oven and bake again.
Once the rolls are cooked, broil them and then serve!
