Oven baked squash goes from basic to elevated thanks to maple sage butter, crispy pancetta, and just a sprinkling of crumbled goat cheese. This dish makes for a stunning side at any holiday table, or a fun weeknight meal on its own.
Cut the squash in half and brush with olive oil. Then bake in the oven until fork tender.
Melt together the butter, syrup and sage.
Cook the pancetta and pat dry. Then add to the cooked squash along with the sage butter.
