Cranberry Rosemary Freezer Jam

A perfect homemade holiday gift 

Freezer jam takes the intimidation out of traditional canning because there’s no need for hot water baths. Freezer jam is stored in the freezer (it is not shelf stable) and can therefore be made quickly, without the need of hot water bath finishing methods. This delicious recipe is quick and easy to make, and makes a great homemade gift for any holiday occasion. 

Ingredients

4 cups Sugar 1 bag Cranberries 2 cups strawberries 1 cup fresh squeezed OJ Zest of 1 Orange 2 rosemary sprigs 1 Packet Sure jell Pectin

Begin by adding strawberries to a large bowl and crush them with a potato masher. if the fruit isn't totally ripe, add a bit of sugar to help release the juices a bit. Set aside.  

In a large saucepan, add the sugar, orange juice orange zest and the powdered pectin. Whisk well to combine and bring to a gentle boil, then add the cranberries and rosemary sprigs. Cook for 5-7 minutes.

Pull cranberries off the heat and carefully fetch out the rosemary sprigs. Add the crushed strawberries and stir to combine.

Immediately fill clean jars with the jam, leaving ½″ space at the top. Wipe jars clean and place lids on jars. Allow to come to room temperature for 24 hours, and then store in the fridge for 1-2 weeks, or in the freezer for up to a year!

Add a bit of ribbon and gift tag to each jar, making sure to include safe storing directions! This Easy Christmas Jam tastes great on biscuits, toast or with cheese and crackers. ENJOY!!
