Begin by sautéing 1/2 onion, diced, in 2 tbsp of olive oil set over medium heat.
Add carrots and sauté for 5 minutes, then add in chicken broth. Bring to a boil.
Once boiling, add in cheese tortellini and cook according to package directions, or until al dente.
Stir in shredded chicken and pesto sauce, and warm through.
Serve with crusty bread and top with parmesan cheese.
