Deliciously simple, this chicken taco soup cooks up in less than 30 minutes and can be made on the stove or slow cooked

Heat oil in a soup pot or dutch oven over medium heat and add diced onions. Cook, then add peppers and dry seasonings and cook till fragrant.
After cooking onions and peppers for a few minutes, add the remaining tomatoes and black beans to the pot
Add in shredded chicken and chicken broth, and bring to a low simmer. Cover and cook on low for 20 minutes, just till all is warmed through and flavors have melded
When the taco soup is done cooking, slowly stir in the cream cheese. Make sure it is at room temperature and divided into 6 equal chunks. This will allow for better incorporation.
