3 LB TRI TIP ONIONS BEEF BROTH HERBS & SPICES
Begin my mixing together a Santa Maria style dry rub, and rubbing it into the tri tip.
In a large skillet or cast iron pan, heat olive oil on medium high and sear tri tip for a few minutes on each side.
Remove tri tip from pan and lower heat. Add onions and a bit of beef broth to deglaze the pan. Cook till onions are softened.
Place onions in bottom of crock pot, set tri tip on top and add remaining beef broth. Slow cook for a few hours. See recipe for detailed directions.
When tri tip is done cooking, it will be fall off the fork tender. Plate over fluffy mashed potatoes, pasta or rice. Or use to make sandwiches or tacos.
