When cooking with higher fat cuts of pork, go for a lower fat cooking method like braising or stewing.

To cook pork safely, reach an internal temperature of 160 degrees. You can also stop cooking at 150, but tent or cover and let rise to safe temp. This will help preserve juiciness of meat.
